I took my favorite oatmeal flavor - maple and brown sugar - and turned it into a muffin!Ingredients | Quaker Maple & Brown Sugar Oatmeal Nutrition Facts¼ cup butter, softened⅛ cup white sugar⅛ cup brown sugar½ cup applesauce6 tablespoons Grade A maple syrup1 egg½ teaspoon vanilla extract½ cup all-purpose flour½ cup chopped walnuts (Optional)½ cup quick-cooking oats¼ cup whole wheat flour½ teaspoon baking powder½ teaspoon baking soda½ teaspoon ground cinnamon¼ teaspoon saltDirectionsPreheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.Combine butter, white sugar, and brown sugar in a large bowl; beat with an electric mixer until creamy. Add applesauce, maple syrup, egg, and vanilla extract; mix well.Combine flour, walnuts, oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt in a separate bowl. Add to the butter mixture, stirring just until all ingredients are moistened.Spoon batter into the prepared muffin cups, filling each 2/3 full.Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 18 minutes.
